Apricot and Almond Tilapia
Ingredients
5-7 oz. Tilapia Fillet
1/3 c. Almonds
1 tsp. Olive Oil
1 c. Dried Apricots
A pinch of salt pepper
A sprinkle of fresh Rose Mary
Directions
Preheat oven to 350 degrees
Place Tilapia on baking sheet
Drizzle olive oil over Tilapia
Combine the rosemary, salt, and pepper in a small bowl. Rub mixture into Tilapia.
Spread out almonds on a baking sheet toast for about 7 minutes. Place Tilapia in at the same time.
Take almonds out to cool. Take out Tilapia after the full 10 minutes is up.
Optional crush toasted almonds to sprinkle over the finished Tilapia
Take Tilapia out of oven and serve with the almonds and dried apricots on top.
