Broiled Lobster

For each serving split one live lobster. Use a sharp pointed knife. Cross the large claws and hold firmly with the other hand. Make a deep incision with the knife at a point between the two large claws and draw the knife quickly through the entire length of the body and tail. 

Remove intestinal vein and craw. 

For four servings:

Prepare a dressing of 1.5 cups of cracker crumbs or cracker meal, one half teaspoon of salt, moisten with two tablespoons of Worcestershire sauce, and one cup of melted butter. Soread the dressing generously in cavity. 

For eye-appeal cut off four of the small claws from each lobster and press into the dressing. 

To preserve moistness, place lobsters on broiler 8-10 inches from unit and cook 25-30 minutes.

Serve with melted butter.


Maine's Own Lobster Roll

Blend two cups of cooked, chilled lobster meat with two tablespoons of mayonnaise.

Add 1/4 cup of finely diced celery if desired. 

Mix well and keep in refrigerator until ready to use.

Split and toast hoagie or hamburger rolls and spread with melted butter. Fill rolls with lobster and serve. 

Delicious with fresh fruit!


Maine Lobster Cocktail

For each serving allow 1/4 cup of lobster meat cut in pieces. 

Blend with 2 tablespoons tomato catsup, 2 tablespoons sherry, 1 teaspoon lemon juice, and 6 drops of Tabasco sauce. 

Chill thoroughly and serve in cocktail glasses.
